Unit 3
Aroma Materials of Natural and Synthetic Origin
Split into two definitive sections, this ‘go to’ module provides the information you need for both natural and synthetic aroma materials. It will give you a thorough account of the raw materials you’ll encounter in the aroma trades today, as well as some key materials from history.
In Part A, you’ll discover the farming methods and extraction techniques for a wide range of essential oils. You’ll also focus on the oils themselves, exploring odour qualities, their chief applications, and practical considerations such as storage.
In Part B, you’ll learn more about the manufacturing techniques used for synthetic aroma chemicals, with specific focus on the important alpha/beta pinene and toluene groups. You’ll also look into the materials, covering all the functional groups used in the aroma trades with each chemical shown in molecular form, detailing its stability, odour qualities, and usage.
Also issued with this module are specially-commissioned essential oil monographs, by IFEAT medal holder and world expert, Brian Lawrence, covering four key essential oil groups used in the creation of flavours and fragrance: floral, spice, citrus and herbal.

“Modern architecture is based on novel computerised design techniques, alongside in-depth knowledge and understanding of the properties and application of both traditional and contemporary construction techniques and materials. This is true of the creative process used by Flavourists and Perfumers in the development and application of flavours/fragrances. Intimate understanding of the building blocks is at the heart of the creative process.”
